Today I am cooking up some foods that are old favorites of my family.

Sauteed Summer Squash and Onions20140712_084255[1]


5 or 6 Yellow Squash

1 Medium Sweet Onion

1 small sweet Yellow Bell Pepper of Banana Pepper

2 tablespoons Coconut Oil , organic

Water (about 1/2 cup)

Sea Salt


1. Cut up all your vegetables and place 2 tablespoons of coconut over med-high heat. Add Onions and Peppers and simmer until almost tender.  Add a little water just to allow them to steam and cover.

2. Once Onions are tender add squash salt and pepper to taste.

3. May add rest of water and then cover and simmer until all vegetables are tender.


This makes about 8 servings. Approximate Total calories 56, Total Fat 3.7 g, sodium 543mg, Carbs 5.8g, Fiber 1.4g, Sugars 3.2g Protein 1.5g.

This is a dish that you can freeze for another day if you want to make this ahead of time.  I try to make several batches of this in the summer while Squash is so abundant and put it up in containers in my freezer.
