Happy Fiesta Friday! I hope we’re dining al fresco tonight. I brought the perfect summer evening dish.
Last week my local market had some gorgeous, huge wild-caught shrimp at a very fair price. The catch? Head on. I’ve never bought head on shrimp before but now that I’m über conscious about only buying wildcaught seafood, we don’t eat shrimp as much anymore. So this was a good deal and worth getting my hands dirty! Pun intended.
So once I got those bad boys cleaned and deveined, I grilled em up. Just a few minutes and done. Next, I tossed the fresh-off-grill shrimp in a cilantro chimichurri (cilantro, garlic, olive oil, lemon, salt and pepper). Seriously amazing and once again, super easy.
